As a dietitian I’m always looking for recipes that are quick, simple, packed with protein and most importantly, delicious. I found a version of this recipe years ago and have fine-tuned it to be even more nutritious and boosted with the potential benefits of CBD. These cookie dough bites are a total grand slam in my book.
Makes 15 cookies
- 1 1/2 cups of canned chickpeas
- 1/2 cup unsweetened almond butter
- 1/4 cup maple syrup
- 1 teaspoon baking powder
- 1 personal serving CBD of your choice.
- 1/2 cup chocolate chips
- Sea salt
Preheat the oven to 350 degrees F and line a cookie sheet with parchment paper. Rinse the chickpeas in a colander until the water is coming through clear in color and then pat them dry with a paper towel. Combine chickpeas, almond butter, maple syrup and baking powder in a food processor. Pulse or blend until completely smooth. Add in CBD* and blend for a minute more. Add in chocolate chips and mix well. Use a small ice cream scooper or wet your hands and form small balls and place on parchment lined cookie sheets. Sprinkle some sea salt on top of the balls and place in oven. Bake for 10-12 minutes**. Store in an airtight container.
*I like to make each bite contain approximately 5 mg of CBD so, depending on which product I’m using, I would add a total of 75 mg to the batter.
**These don’t set like cookies, so they will be softer and more doughy.
